Chocolate Mousse

Oh my goodness, this is so yummy, decadent tasting, and soooo easy! Given it is fresh berry season, I would highly recommend this dessert with raspberries or strawberries and maybe a mint leaf for extra color and flavor. No one will believe that it is made with tofu. I am not a big silken tofu fan and sometimes vegan recipes really fall flat compared to their animal product versions. This really is not the case. Check it out.

  • 1 package silken tofu (12 oz)
  • 1 package vegan semi sweet chocolate chips (10 oz)
    (most semi sweet chocolate chips are vegan but the cheap ones often are not so check the ingredients)
  • 1/2 cup vegan powdered sugar (organic is often vegan as well)
  • 1 teaspoon vanilla extract (and mint if you want to get fancy)

Melt the chocolate chips in a microwave for 1 minute, stir, then another minute. I do not have a microwave, so I just do it on the stove over a pan of water. Just watch it because they melt quick and burn easy. Keep stirring them as they melt.

Put all the ingredients in the blender and blend on high until light and fluffy. Taste and add more sugar or extract if needed.

Refrigerate for at least 2 hours. Serve with berries and fresh mint, maybe some vegan whipped cream? Soyatoo is pretty good. Que rico.
